I’m Cookin’ Again!

Although I am not supposed to be putting weight on the ball of my right foot, I managed to do come great cooking yesterday for the Superbowl.

We started out the day heading to Fred Meyer to shop. On the way I had Robert turn into Nancy’s Kitchen where I thought we could get one of her great breakfast burritos. But I forgot they don’t do them on the weekend. So, I had one of the specials – the Huevos Rancheros. Robert got the corned beef hash. He was disappointed. I was happy and had plenty for the next day.

Robert thought his corned beef was too dry and stringy. I do like to order it, too, but I have often been disappointed. I think I need to stick with the kind from the can. I grew up on it just fine.

The beef is hidden as is most of the hash browns.The biscuits are on the left. I ordered a salmon hash a few months ago and was disappointed. We need to learn not to order it, I guess.

I rode around in one of the motorized carts you see marginalized people using in Fred Meyers. Well, the place was crowed with people getting food for their Super Bowl pig-out, but I still managed to move around pretty well if I do say so myself. Robert insisted I use it. I wanted to be there to help him find the simmer sauce. He never asked for help when he is on his own…. I didn’t run into anyone, but I did warn people that it was my first try at it. They gave me space. Backing up is tricky….

I made a soup from the Oregonian, foreground, and heated up a crab shrimp soup Dace Berzins had Robert bring home for me when he had lunch with them at their place at the beach.

The soup was an easy one except for the fact that Fred Meyer was out of Progresso Lentil Soup. I used two can’s of Amy’s Lentil instead. Worked just fine. Here is the recipe.

Soon, I was up again making a fabulous meatloaf. I have never before purchased a “simmer sauce”, aka curry sauce, before. There are found in the India food area of your store. There are many choices, too. This recipe called for jalfrezi simmer sauce. They suggested the Patak brand from Fred Meyer. We found it near the health food area at the Stadium FM on Burnside. Here is the recipe. The problem with cooking when the game is on, I missed the commercials and had to have Robert back up for replays of great moments. I do have a small tv on my kitchen counter, but I can’t cook and watch every play at the same time.

Orders Came Today

I just learned that my daughter-in-law, who is a Lieutenant Commander with the US Coast Guard, received her orders today for her next assignment. The family will be moving to the DC area where she will be at Coast Guard Headquarters with the USCG Division of Aviation Safety. It is like the FAA. Now she is finishing up her Masters Degree at Embry Riddle Aeronautical University in Prescott, AZ and will be moving in three or four months. Previously, she flew helicopters out of Sitka USCG station.
They weren’t sure where she would be sent until today. I was hoping for Alameda, CA so I could be closer, but DC is a great place to be, too. When I was first married we lived in Alexandria, Virginia.
I will be babysitting in March while they house hunt….

Post-op Visit

Friend, Linda Stern, drove me to (and from) my Kaiser Permanente post-op appointment. She dropped me off at the main door and I went in using my crutches and fortunately there was no line to check in. I noticed a volunteer and agreed that he could push me to the Podiatry Unit for my check-up.  It would have been quite a schlep for me without the help.

Dr. Granville's nurse cut all these bandages off so the doctor could see my stitches.

As I waited for the doctor to show up, I looked at the bottom of my foot for the first time since the surgery.

Dr. Granville said things looked good and in one week I can even get my foot wet. He wrapped my foot and gave me a choice of colors: yellow, tan, blue or a faded red.

I like the look.
